SAY HELLO to the ultimate chocolate date caramel cookie sandwich, one that is sweet, salty and incredibly hard to resist! You have two chewy chocolate cookies sandwiched around a creamy date caramel filling for the perfect two-in-one treat.

They are so fast and easy to make, super fudgy and rich, made from healthy ingredients, vegan, gluten-free, NO BAKE and delicious coffee companions.

INGREDIENTS⠀(FOR ABOUT 10)

COOKIE
1 cup raw cashews ⠀
1/2 cup almonds ⠀
6-7 pitted medjool dates (soak in warm water for 10 minutes then drain)⠀
1 tsp of sea salt
1/3 cup cacao powder⠀
1/4 cup coconut flour ⠀
⠀
CARAMEL
200g pitted dates (around 10)⠀
1/2 cup almond milk ⠀
1/2 cup smooth or crunchy @byronbaypeanutbutter
PROCESS
⠀
FOR THE CARAMEL
Add all ingredients to a food processor and process until you obtain a smooth caramel paste. Set aside.⠀

FOR THE COOKIE
1. Add the nuts to the processor and pulse until small bits remain. ⠀
2. Add dates and salt, mix again. Then add cacao powder and coconut flour and mix again until well incorporated.⠀
3. Line a flat surface with baking paper and place the dough in the center. Then top with another baking paper and roll the dough into an even rectangle.⠀
4. Remove the top layer of paper and use a small circular cookie cutter to cut out as many cookies as you can (we got about 20)⠀
5. Gently transfer the cookies onto a flat plate or tray and place in the freezer to chill for 10-15 mins.⠀
6. Top half of the cookies with the caramel. Then pop back in the freezer to chill for just a few minutes. Then remove from freezer and top with the other half of the cookies, pressing down slightly to adhere.⠀
7. Enjoy as is or transfer back to the freezer to chill. Cookies will keep covered in the refrigerator up to 1 week or in the freezer up to 1 month.⠀
